Mardi Gras Madness

Bonjour,

     Hey guys!  Ellie here and I want to tell you about these mini king cake cupcakes. These delicious little treats are very easy and there are not many ingredients. This is the recipe:

2 tubes of dough sheets
1/2 cup of sugar
1tbsp of cinnamon

Filling:
1 block of cream cheese
1/2 cup sugar
1tsp of vanilla extract (we used a special vanilla extract my grandparents brought back from Mexico!)

Glaze:
1 cup powdered sugar
1tbsp lemon juice
1tbsp water(or omit the lemon juice and use 2tbl water)

Preheat the oven to 375 degrees. In a stand mixer-beat the cream cheese,1/2 cup of sugar, and vanilla extract until combined, set aside.
In a bowl, combine the 1/2 cup of sugar and the 1tbl cinnamon, set aside.
On a lightly floured surface, unroll the tubes of dough. Cut the sheets into 4 rectangles, you should get 8 rectangles after cutting. Then put a layer of the sugar and cinnamon mix and spread. After that put a thin line of the cream cheese mixture on the LONG side of the dough. Roll the dough into a tube like shape then fold the right in then the left side in. Put into a greased cupcake pan, cover in tin foil and bake for 12 min. After that take the tin foil off and bake til golden brown. Then finally take the glaze and drizzle onto the king cakes and then take some sprinkles and sprinkle on top. You can take any color sprinkles but the Mardi Gras colors are green, gold, and purple. Happy Holidays

Bonjour,

        Sorry I haven't blogged in a while but I have been so, so busy. Some of the reasons I've been so busy is because of baking, Christmas with family and New Year's Eve!!!! I've been baking a lot of things this holiday such as a gingerbread house, Christmas treats and New Year's Eve cupcakes.
The ginger bread house  was very square and very fun to make. The gingerbread house was decorated with red candy balls, watermelon candies, gumdrops and other colorful candies.
        The next thing I made were these cute candy treats that I gave to 3 different families. The first one I'll tell you about is the Rolo and pretzel treat. You are probably familiar with this one. All you have to do is put pretzels on a cookie sheet and place the Rolos on top and put them in the oven up to to 5 min. The next thing I made was Oreo snowmen. They were golden Oreos dipped in white chocolate and decorated with Mike and Ike's for the  nose and brown M&M's for the smile and eyes. Then I made reindeer out of nutter butter cookies dipped in brown cocoa chocolate melts with pretzels as the antlers and finally multi-color M&M's  as the smile, nose and eyes. The last sweet I made was green rice crispy Christmas trees!! We made Rice Krispie treats and put green food dye in. We rolled them into the cone shape of a tree. The trunk for the trees were Reese's peanut butter cups and it was decorated with M&M's as the ornaments and a yellow M&M as the star.
       Finally I made New Year's Eve cupcakes. I also made LSU cupcakes for the LSU and Iowa game. These cupcakes were decorated with fondant, icing and sprinkles. I got the fondant for Christmas which I was very excited about. I hope to use my new baking supplies I got for Christmas very soon. I'll blog about my next project soon!
