Mardi Gras Madness


     Hey guys!  Ellie here and I want to tell you about these mini king cake cupcakes. These delicious little treats are very easy and there are not many ingredients. This is the recipe:

2 tubes of dough sheets
1/2 cup of sugar
1tbsp of cinnamon

1 block of cream cheese
1/2 cup sugar
1tsp of vanilla extract (we used a special vanilla extract my grandparents brought back from Mexico!)

1 cup powdered sugar
1tbsp lemon juice
1tbsp water(or omit the lemon juice and use 2tbl water)

Preheat the oven to 375 degrees. In a stand mixer-beat the cream cheese,1/2 cup of sugar, and vanilla extract until combined, set aside.
In a bowl, combine the 1/2 cup of sugar and the 1tbl cinnamon, set aside.
On a lightly floured surface, unroll the tubes of dough. Cut the sheets into 4 rectangles, you should get 8 rectangles after cutting. Then put a layer of the sugar and cinnamon mix and spread. After that put a thin line of the cream cheese mixture on the LONG side of the dough. Roll the dough into a tube like shape then fold the right in then the left side in. Put into a greased cupcake pan, cover in tin foil and bake for 12 min. After that take the tin foil off and bake til golden brown. Then finally take the glaze and drizzle onto the king cakes and then take some sprinkles and sprinkle on top. You can take any color sprinkles but the Mardi Gras colors are green, gold, and purple.
