I have missed you so much! A few days ago I made a delicious chocolate pie for Pi Day and I wanted to share with you all how I made it.
I started off by making the crust. You start with a full packet of Oreos. I twisted them open and scraped out all the good white filling. I did that to all the cookies. Then I put them in a zip lock bag and took a mallet and crushed them into little crumbs. I added 6 tablespoons of butter and fully combined them and patted them into a 10 inch pie pan. I baked it in the oven at 350 degrees for five minutes. This was the only baking I had to do.
While that was cooling I made whipped cream. I put 2 cups of heavy whipping cream in a stand mixer and mixed that while I slowly added 1/4 cup of sugar to the cream. In a double boiler I combined 1 bag of chocolate chips, 1 cup of heavy whipping cream, 1 teaspoon of vanilla extract, and a pinch of salt. Remember to use semi-sweet chocolate chips. I whisked that together until fully combined. After it cooled I took scoop-fills of the homemade whipped cream and folded it into the chocolate mixture and put it all into the crust.
My pan was very shallow so I used the extra to make another pie with a graham cracker crust. After your pie(s) are filled put it into the freezer for a couple of hours. After it is cooled spread Cool Whip on top as
almost a frosting but make sure you can see the edges of the pie filling.
I made a stencil of the "pi" symbol. You can make the stencil out of cardboard or use something from around the house I used a sturdy paper play as my stencil. Then put the stencil on the pie and sprinkle the Oreo crumbs on the stencil so when you pick up the stencil the symbol of pie is on top of the chocolate pie which officially makes it a Pi Day pie! If you don't want to make this pie for Pi Day you could customize it with the stencil and put whatever number, letter, initials, or symbols you want to.
I usually try ideas that I made up in my head or with my family but I got the idea to do this pie from a YouTube show called Nerdy Nummies with Rosanna Pansino. Rosanna Pansino has been a very big impact on my baking and blog. She gave me the idea to start baking and now I have a blog! But anyway I hope you enjoy this pie and share it with friends
